Fideo Seco
Hope you’re having a great day today! I’m beyond excited to be able to share hands down the favorite thing my grandma would make us as kids - Fideo Seco.
This recipe is in loving memory of her, so I tried to make it as close to the way she would but with my own spin on it. I can confirm that it tastes pretty close, if not exactly the way I remember it - it’s soooo good! This dish is family friendly, can easily be made dairy-free without the cheese and done in under 15 minutes including prep so its perfect for a quick lunch or side with dinner. Ingredients (Serves 4-6):
2 tablespoons avocado oil
1/2 cup diced onion
2 tablespoons of tomato paste
14 oz fideo (coiled or cut)
28 oz water + 3 tablespoons chicken bouillon or 28 oz chicken broth with seasoning of choice
*optional 1 cup cheese or as much as you’d like
Steps:
1. Over medium heat using a large sauté pan, cook onions until translucent then add tomato paste and mix occasionally until the tomato paste turns a deep red color which takes about 2-3 minutes
2. Break up fideo coils then add to the pan to brown for 2 minutes, stirring occasionally
3. Add liquid (if using water, use tbsp bouillon for each cup of water) (if using chicken broth, add preferred seasoning and cover for 10 minutes
4. Add freshly grated shredded cheese then cover for another minute until the cheese is melted
