Spicy Tunacado
Took a stab at recreating the viral @joeandthejuice tunacado with a few additions. My version uses thinly sliced sourdough, two heaping tablespoons of whipped tuna (recipe below), 1/2 an avocado, sliced tomato, crispy chili oil and a thin pesto vinaigrette (recipe below)
Whipped tuna:
Add the following to a good processor - 2 cans albacore tuna, 1/4 cup mayo, 1/2 squeezed lemon, salt, pepper, red pepper flakes, 2 tablespoons diced pickles, 1 diced celery rib, 1/2 diced red onion, 2 tablespoons diced parsley then pulse until smooth about 30 seconds
Pesto Vinaigrette:
Add to a food processor or blender — 2 handfuls basil, 1/2 cup olive oil, 1/4 cup red wine vinegar, 1 garlic clove, red pepper flakes, salt then strain so that it’s a thin pesto sauce
