How To Make Turmeric Tuna Avocado Boats (Whole30 / Paleo / Gluten-Free)
I’ve been getting so many questions about easy lunch options, so today I’m sharing one of my favorite recipes that takes less than 5 minutes to make and is also Paleo, Whole30 Approved and Gluten-Free. It even uses the avocado shells as bowls so you can take them on the go, plus they’re packed with so much protein, good fats and also anti-inflammatory as well. If you’re looking for a lighter meal, but also super filling - this is an amazing option!
The tuna-avocado boats are also a great option to pack in kids lunches, take to work with you or just enjoy at home for super delicious lunch or snack. I can’t wait to see your creations, tag me @sweatspace on social and I’ll repost - hope you get to enjoy them soon as they are next level!
Ingredients: (serves 1-2)
2 Avocados
5oz Tuna
2 Tablespoons Avocado Mayo
1/4 Jalapeño
1/2 Celery Stalk
1 Green Onion
1/2 Lemon
1 Teaspoon Turmeric
Sea Salt
Black Pepper
Directions:
Add tuna, mayo, turmeric, jalapeño, celery, green onion, lemon juice and mix together. Season with salt and pepper to taste.
Scoop out the avocado and set the shells aside. You can either slice the avocado into cubes and gently mix the tuna into avocado OR if you’re strapped for time, add the avocado directly into the tuna, mash the avocado until completely mixed.
Add the tuna and avocado back into the avocado boats and enjoy!
