If you’re ever in need of a super simple and easy to make quinoa recipe that can be super versatile and integrated into breakfast, lunch or dinner - this is the one! I love making this with eggs in the morning as well as with salads for lunch and as a side for dinner. This recipe only takes about 10-15 minutes depending on how big of a serving you make and the best part, you can add in all the ingredients and think about it while it cooks!
Here’s what you’ll need:
1 Cup Quinoa
2 Cups Filtered Water
2 Cloves Minced Garlic
1 Tablespoon Cumin
1/4 Teaspoon Dried Thyme
1/2 Teaspoon Maldon Sea Salt
1/4 Teaspoon Black Pepper
1/4 Teaspoon Cayenne Pepper
1/2 Fresh Squeezed Lemon
1 Tablespoon Avocado Oil or Olive Oil
Instructions:
Rinse the quinoa under running water in a mesh strainer until water is clear. Then add the water, quinoa, cumin, cayenne pepper, garlic, thyme, black pepper and salt to a pot.
Bring the water to a boil then cover and lower the heat to a simmer. Cook for about 10-15 minutes or until water is completely absorbed, then turn off the heat.
Add 1/2 of a lemon as well as a tablespoon of oil and fluff the quinoa and salt + pepper to preferred taste. Serve immediately or save for later and enjoy!.
