The Healthy Power Cookie
A few months back I visited the Four Seasons in Vancouver and had an incredible post-workout cookie which was also super healthy at the same time. Hard to believe, I know. Considering all the faux-healthy treats on the market, this one was the real deal. I reached out to the chef and he was kind enough to send the recipe. I've put my spin on it and adapted the recipe. I hope that you enjoy!
Recipe: Makes 24 cookies (using 1/3 cup measuring cup)
Ingredients:
2 ¼ cups Quick Cooking Oats
2 cups Gluten Free + Wheat Free Delish Flour Blend
1 cup Sunflower Seeds
¾ cup + 2 tbsp Pumpkin Seeds
½ cup Shredded Unsweetened Coconut
¼ cup Flax Seeds
1/2 cup Brown Sugar (coarse)
1 tbsp Ground Cinnamon
2 ¼ tsp Sea Salt
1 ¾ cups Dark Chocolate Chips
1 ¼ cups Dried Blueberries
¼ cup Water
¼ cup Molasses
¾ cup Flax Oil
1 cup Unsweetened Almond Milk
Method:
Preheat oven to 350’F line baking sheets with parchment paper
Combine all of the dry ingredients in a large bowl
Combine all of the wet ingredients and add to the dry ingredients
Mix together until both the dry and wet ingredients are just combined
Scoop onto the baking sheets and gently flatten cookies
Bake for approx 18 to 22 minutes (until lightly browned, do not overcook, they're best when moist and chewy)
